Hyderabadi chicken dum biryani in oven



This is the best biryani ever,made in oven.



WHAT YOU NEED
Basmati rice-2 cups
chicken drumsticks/ leg pieces-10-12
onions-2 small
tomato-1big(opt)
green chilli-3 (optional)
red chilli powder-2 tspto taste
salt-to taste
turmeric powder-1 tsp
orange food colour-2 pinches
milk-1/4 cup
curd-1/2 cup
lemon juice-1 small
cumin powder-1/2 tsp
coriander powder-1/2 tsp
biryani masala powder-1tsp
ginger garlic paste-1 tbsp
fresh mint leaves-handful
fresh coriander leaves-handful
oil-2 tbsp for marination
1/2 cup for frying onions
butter melted -1/4 cup



TO COOK RICE

Oil-1 tsp
black pepper corns -4
cloves-2-3
cardamoms-2
bay leaf-1 big



TO SERVE

round slices of onion-1
lemon wedge-1
any curd raita
any gravy





HOW TO COOK


  1. Wash the chicken thrice and put slits on top with sharp knife....Chop onions and tomatoes...crush the green chilli like a coarse paste (If you are using)
  2. In a thick bottomed vessel add in cumin,chopped onions,tomatoes,chilli paste and add all spice powders like-chilli+coriander+cumin+biryani masala,turmeric powder,ginger garlic paste, mint,coriander leaves,lemon juice,yogurt too...mix well..
  3. Marinate this over night or at least 2 hours.. Fry sliced onions in 1/2 cup of oil and take them on kitchen paper towel.
  4. Next wash rice twice and keep aside for 30 minutes.....Boil water in a vessel and add the ings which mentioned under to cook rice.. when water starts boiling add rice and cook 70% ,then drain water and keep aside rice in colander...
  5. Now apply oil in oven safe glass bowl (I used rectangular shaped )and add marinated chicken spread it evenly and add rice,spread well on top of the chicken...
  6. Now spread the fried onions,mint n coriander leaves and pour some butter on top for rich taste.(optional). Finally add the food colour which is mixed in warm milk and cover with aluminium foil properly....
  7. Preheat oven at 200 degree C and after 10 minutes the biryani bowl and cook this for 35-45 minutes.
  8. Off flame and remove foil after 10 minutes......Give a good mix and Serve hot with onion raita........
