Zarda is a traditional South Asian sweet dish, made by boiling rice with (orange) food coloring and after that milk and sugar are added, and flavoured with green cardamoms, pistachios or almonds.
Sela Rice-2 cup (soaked for 2 to 3 hours)
Sugar-1 ½ cup
Orange food color- 1/2 tsp
Pistachio (chopped)-6 to 8
Almond (chopped)-6 to 8
Few Ashrafis (candy fruit) murabba
Cloves- 3
Oil or Ghee-½ Cup
Green cardamoms (Choti Ilaichi)-4 to 6
Milk- ½ cup
1-Boil water in large PAN,then put drained rice in this boiling water along with orange food color and cook for 5 to 8 mins. When the rice is boiled, drain all the extra water.
2-Now take a big bowl or dish and put boiled rice, milk, sugar,dry fruits and ashrafies ( Candy fruits/murabba )as well and mix it well.
3-In a pan, put ghee and fry cloves and cardamom, when they turn brown and an aroma starts to come, add rice and mix it well and then put on dum for 5 min on high heat. Then put it on slow heat and then serve.
